Potato Chip-Peanut Butter Cookies

I hate to throw away food, even one cup of potato chip pieces.  These cookies are a good way to use up the chips and have a nice, crisp cookie to enjoy.  The peanut butter chips add a nice additional flavor.

POTATO CHIP-PEANUT BUTTER COOKIES

  • Servings: Approx. 2 dozen small cookies

  • ½ cup light brown sugar
  • ½ cup granulated sugar
  • ½ cup butter, softened
  • 1 egg
  • 1 tsp. vanilla
  • ½ tsp. baking soda
  • 1-¼ cups all-purpose flour
  • ¾ cup peanut butter chips
  • 1 cup crushed potato chips

Preheat oven to 350 degrees F

Have two ungreased cookie sheets ready

In the large bowl of an electric mixer, place the light brown sugar, granulated sugar and softened butter.  Beat until smooth and creamy.  Add the egg and vanilla and beat to blend.  Mix in soda and then gradually add flour, beating just until all of the flour is incorporated.

By hand, stir in the peanut butter chips and potato chips – batter will be quite stiff.

Using a rounded kitchen teaspoon, drop on ungreased sheets, 2 inches apart.

Bake @ 350 degrees F for 8-10 minutes until golden brown.

Remove cookies immediately to a rack to cool.

Makes about two dozen small cookies.  Do not refrigerate or freeze to keep potato chip crumbs crispy.

  2. Ooh, this sounds good. I’m going to try this one. I love potato chip cookies but never had any with peanut butter. I’m going to share with you my Potato Chip cookie recipe. It is a great cookie and I make it for my grandkids and they love them. I also use up my bottom of the bag chips for this and don’t have to throw anything away…I hope you enjoy these. I know it sounds like a lot of butter but it makes a lot of cookies….

    Potato Chip Cookies

    4 sticks butter
    1 cup sugar
    2 tsp vanilla
    3 cups flour
    1 cup crushed potato chips
    Pecans or walnuts if you want them…

    Bake at 350 degrees for 10- 15 minutes until brown on bottom. When cool, sprinkle with powdered sugar.

      1. These cookies are so good. They are my favorite easy cookie to make but I haven’t made yours yet! Pecans are my number one choice but I’ve used walnuts when I didn’t have pecans and I almost like them as much…Have fun with this recipe.

  3. Boy, did THIS post bring back memories! YEARS ago & I do mean YEARS…while I was still in nursing school, a classmate shared her recipe for “potato chip cookies”. I must dig it out to compare…I never throw anything away, so I’m sure it is still in my recipe box.
